Easy Shrimp Fried Rice Recipe

This delicious and healthy shrimp fried rice is the best meal for breakfast, lunch and dinner.
3 tbsp butter, divided
2 cloves garlic, minced
30 frozen shrimp, thawed, peeled, and deveined
3 carrots, diced
Salt and pepper, to taste
5 cups cooked white rice (must be cold)
¼ cup soy sauce
1 ½ tbsp rice vinegar
3 green onions, chopped
¾ cup snow peas, trimmed and halved
- Over medium heat, melt the butter in a non-stick skillet.
- Beat eggs well and cook in skillet with butter. cook for approximately 2-3 minutes until soft-set.
- Over medium heat melt remaining butter in a large skillet.
- Once melted, add garlic and shrimp. Cook the shrimp until it turns pink. Add peas and carrots. Sprinkle with salt and pepper. Set aside.
- Add leftover cooked rice to the shrimp, making sure to break up any chunks of rice. Add more oil if necessary to fry rice. Pour soy sauce and rice vinegar over the rice.
- Evenly coat the rice with soy sauce and rice vinegar by tossing it. Cook for about 3-4 minutes.
- Add your scrambled eggs and shrimp mixture. Toss it again together gently for about 2-3 minutes.
- Remove from heat. Let it cool and top with thinly sliced green onions. Serve and enjoy!
