Quick and Easy Pineapple Upside Down Cake

Sometimes you need something sweet in a rush with ingredients you already have in your cupboard.  This Quick and Easy Pineapple Upside Down Cake brings can meet that criteria..  The best thing is that it’s easy to put together by using a store bought yellow cake mix and it will be ready in less than an hour.

The Best Pineapple Upside Down Cake Recipe

Preheat your oven to 350.
Spray a 13 by 9 glass Pyrex pan with non stick spray.
1/2 cup Kerrygold butter(1 stick or 8 Tbsp)

1/2 cup packed brown sugar
1 20 ounce can Dole Pineapple– drained and set liquid aside
12 maraschino cherries- if you like you can add one to each pineapple center but I never have.

This Quick and Easy Pineapple Upside Down Cake will quickly become a family favorite with Ingredients you might already have in your cupboard -Hey Creative SisterPlace your butter in the pan and place it in the oven to melt, making sure that it doesn’t burn.

Sprinkle brown sugar on top of butter evenly around bottom of the pan.  Arrange pineapple on top of butter and overlap the pineapple slices if necessary.  Place one maraschino cherry in the middle of each pineapple slice.

Prepare Cake Mix  according to package instructions

Pour prepared cake mix batter on top of butter/brown sugar/pineapple topping and bake in oven for 25-30 minutes until cake springs back when touched in the center and a toothpick inserted comes out clean. Pour leftover pineapple juice on top over cake.

Allow to sit for at least 30 minutes in the pan.  Place a long platter over your pan and gently flip, gently shaking the cake till it unmolds onto the serving platter.

Your pineapple/brown sugar topping should be a crisp, carmelized and a beautiful brown!
This recipe is  fast and  delicious!  Your family will never know that this is a boxed cake mix so hide the box.   This might turn out to be the best pineapple upside down cake recipe that you make!
